I really like the look these spaces have with the collage of photographs on the walls, it seems like one of those elements that might look best when it comes about organically, so I'll try to patiently achieve this effect in my apartment, I've never been that patient though.

Displaying artwork like that is actually a vary traditional way of showing work. In the 18th and 19th century, museums and galleries clustered artwork together on one or two large walls. The work was arranged by subject matter, which also determined what size the painting could be, i.e. religious paintings were the largest and in the center of the wall, then landscapes, portraits, still lives, etc. It wasn't until much later that galleries separated the artwork and created a blank space around each piece.
